But from all the methods of obtaining this delicacy, the original method stands out, in which the berries are not subjected to heat treatment. Strawberry jam without cooking berries has many advantages. About them and how to make jam in this way and will be discussed below.

The benefits of jam without cooking

The meaning of any jam is not only its taste, but also the benefits of berries, which can be closed in jars for the winter.

Important! Strawberry jam, cooked according to classic recipes, during the heat treatment loses almost all the benefits of fresh strawberries.

A smaller part of the vitamins is lost if you cook for five minutes.

But strawberry jam without cooking berries is a living delicacy, which retains almost all the beneficial substances and vitamins, namely:

  • organic acids;
  • vitamins A, B, C, E;
  • potassium;
  • magnesium;
  • pectin;
  • iron and other beneficial substances.

In addition, strawberry jam without cooking berries keeps the taste and aroma of fresh strawberries. Another advantage is that the preparation of such a delicacy will take significantly less time than regular cooking.

But the preparation of berries in this way has one drawback - you can only store ready-made jam in the refrigerator.

Collection and preparation of strawberries for "live" jam

Since the taste of strawberries in such a jam is particularly felt, then you should choose only the ripest of them. You should not choose a strawberry, which is already overripe or healed - it is better to eat it.

Tip! For a "live" delicacy you need to choose only a strong strawberry.

Soft berries after washing will give a lot of juice and become even softer. The jam made from them will be very liquid.

Collect ripe strawberries for such a delicacy is best in dry weather. But we must remember that in advance it is not worth collecting. After harvesting, it is necessary to immediately proceed to the preparation of jam, otherwise it may deteriorate.

Collected strawberries must be sorted, removing the stalk, and wash well. Then it should be laid out on a paper towel so that it dries out. For drying it will be enough for 10 - 20 minutes, after which you can begin to prepare a "live" delicacy.

Classic recipe

This is a classic recipe for strawberry jam without cooking, which was used by our ancestors. The delicacy made according to this recipe is very fragrant.

For this recipe you need to prepare:

  • 2 kilograms of strawberries;
  • 1 kilogram of granulated sugar;
  • 125 milliliters of water.

In the collected ripe berries must remove all the leaves and stalks. Only then should they be rinsed in running water and dried. Dry berries should be put in a clean bowl.

Now you have to boil the syrup. This is done quite easily. To do this, water with sugar dissolved in it should be put on medium heat and cook for 5-8 minutes. The finished syrup should be thick enough in consistency, but not white.

Tip! There is one trick to understand that the syrup is ready. For this you need to scoop a teaspoon of syrup and blow on it. The finished syrup due to its viscous, almost frozen consistency does not react to this.

Ready, still hot syrup should pour the prepared strawberries and cover with a lid. Now you can give the syrup time to cool. During this time, the strawberry will give juice, thereby making the syrup more liquid.

When the syrup has cooled, it must be drained through a sieve and boiled again for 5-8 minutes. Then again boiled syrup should be poured over the strawberries and leave to cool. The same procedure should be repeated again.

Important! If after the third cooking, the syrup did not turn out to be thick enough, then you can boil it again. In this case, you can add a little sugar.

After the third boiling, the finished delicacy can be poured into sterile jars. But first it is necessary to put the berries at the bottom of the jar, and only then pour them with syrup and close them. Before complete cooling of the banks should be covered with a blanket.

Quick recipe with photos

This is the easiest and fastest recipe for strawberry jam, which can only be. As you can see in the photo, only 2 ingredients are needed for it:

  • 1 kilogram of strawberries;
  • 1.2 kilograms of granulated sugar.

As always, we pick up the tails of the collected berries, wash them well under running water and dry them.

Dried strawberries should be very carefully cut into 4 pieces and put in a deep bowl. On top of it all the sugar is poured.

The bowl should be covered with a lid or towel and leave at normal temperature overnight. During this time, the strawberry under the influence of sugar will give all its juice. Therefore, in the morning it must be thoroughly mixed.

Only then can the finished jam be poured into sterilized jars. Before you close the jar with a lid, sugar should be poured over the jam. In this case, the sugar enters as a preservative, which stops the fermentation of jam. Only then can the jar be closed with a lid.

For those who love more, you can add a lemon. But before that, it must be washed, peeled and pitted, crushed in a blender or minced. It is necessary to add it almost before closing in the cans, when strawberries with sugar already give juice.

Strawberry jam prepared according to these recipes will be simply indispensable during the period of winter cold, when you especially want heat and summer.
