For this savory and delicious salad, we need:

  • young small cucumbers - one kilogram;
  • Bulgarian sweet pepper - five pieces (large size);
  • fleshy ripe tomatoes - half a kilo;
  • hot pepper - one piece;
  • garlic - from 5 to 8 teeth;
  • onions - two pieces (large size);
  • carrots - 1 piece;
  • carnation;
  • sunflower oil;
  • Dill seeds;
  • allspice;
  • coriander seeds;
  • Bay leaf;
  • salt to taste

A deep frying pan is put on a small fire, refined sunflower oil is poured in and fried onions and shabby carrots are fried on it. Vegetables should be thoroughly softened, but not fried.

Attention! There should be a lot of oil.

Tomatoes are washed under running water. Then they are removed from the stem and, if desired, you can remove the skin. Bulgarian pepper is also mine, cut, cut the stem and remove the seeds. After that, grind tomatoes and peppers with a blender or meat grinder. The resulting mass should be a little salt, add the spices prepared to taste and set on a slow fire. We give the mixture to boil, then throw in it cucumbers, which are pre-cleaned and cut into rounds. Lecho boil for at least three minutes, and then add roasted carrots with onions.

Next, proceed to the preparation of cans for lecho. They need to be thoroughly washed and sterilized. Then, peeled garlic is placed on the bottom of each container, and then it is poured and lecho itself. From above on banks we put covers and we spread containers in a big pan with water. We put it on a slow fire, wait until the water boils, and mark exactly 20 minutes. After this time, it will be possible to roll banks with lecho.

Each capacity is turned upside down. Then the banks need to be wrapped in a blanket or blanket. We leave our blanks for a day so that they cool completely. Further, the blanks are stored in a dark cool place.

Attention! Instead of cucumbers, zucchini can also be used. Or take half a serving of cucumbers and half a zucchini.

Instead of fresh tomatoes, tomato paste is perfect. Before cooking, it should be diluted with water to get a mass that looks like liquid sour cream. It is important to look at the composition of the paste. It should not be preservatives. The paste itself has excellent preservative properties.

Cucumber Lecho with Tomatoes

  • small cucumbers - up to 2.5 kilograms;
  • ripe fleshy tomatoes - up to 1.5 kilograms;
  • garlic - from 5 to 10 teeth;
  • sweet Bulgarian pepper - half a kilo;
  • table 9% vinegar - one spoon;
  • refined sunflower oil - 50 ml;
  • red hot pepper to taste;
  • granulated sugar - about 100 grams;
  • dill and coriander seeds;
  • salt - 2 (with a hill) tablespoons.

Tomatoes and peppers are peeled and chopped, as in the first recipe. Then the vegetables are ground using a meat grinder or other kitchen equipment. Now this liquid mass is put on the stove and brought to a boil. After that, you can add to the mix all the spices. Next, add peeled and sliced ​​cucumbers to the dish. The salad is boiled for another 10 minutes, after which they pour in sunflower oil and vinegar. As soon as the dish starts to boil again, the fire is turned off.

Put cleaned and chopped onion and garlic into clean sterilized jars. Immediately after them in the banks spill vegetable mass. Now each jar is rolled up with sterilized lids, and left to cool upside down. After the salad has cooled completely, you need to move the billet to a cool place.
